Rhubarb Custard

vanilla vodka, rhubarb liqueur, simple syrup

I found this recipe on absolutdrinks.com.

I made this homemade rhubarb liqueur and it is delicious to sip straight, but I’ve also been looking for cocktail recipes that use it. There aren’t many, but I found this one today and it sounded interesting.

As you look at the ingredients, keep in mind that vanilla vodka doesn’t actually add any sweetness. It is, however, regularly used in overly sweet cocktails, so I think it gets a bad rap. In truth, it adds really nice flavor to vodka! Vodka needs it, since it tastes like nothing.

This cocktail is a lovely surprise! I don’t really like the name of it, though…I don’t want the image of gloppy egg desserts when I have a drink. 🥚😁 That aside, I cut the simple syrup in the recipe by half, just because it looked a little too sweet for me. The resulting drink is VERY yummy, it would be a nice after dinner cocktail, or over ice with soda for a summer cooler. Yum, yum, yum.

Also, rhubarb liqueur makes cocktails with the very prettiest color!
