Old Yeller

1.5 oz Old Tom Gin
1 oz Yellow Chartreuse
1 oz lemon juice
1/2 oz simple syrup
splash St-Germain
1 Combine all ingredients in a shaker and shake with ice.
2 Strain into a chilled couple glass.
3 Express oils from lemon peel on the surface and around the glass, garnish with lemon peel and fresh thyme.
