My favorite rum drink so far! Maybe because it’s pretty much a gin drink, made with rum. Here’s the story, or the most believable of the stories, at least.⁣

An American engineer was working in Daiquiri village in Cuba in the late 1800s. He was having some American friends to visit, and he realized he had no gin to serve them. (My past research tells me that rum wasn’t popular with Americans at the time.) So he made up this drink, pretty much a South Side with rum instead of gin, for his guests. ⁣

Nowadays we usually see this drink served frozen, in the US at least. It is the same basic recipe of rum, lime, and sugar – but often with strawberries or watermelon or another fruit added in, all thrown in a blender with ice. Sort of a grown-up Slurpee. ⁣

Bartender note – I just made one of these with fresh lime juice, and a second with Rose’s. Fresh lime juice makes all the difference. It took me three limes to get one ounce of juice, but it’s worth it.⁣
