In The Savoy Cocktail Book, recipes call for London Dry Gin or Old Tom Gin. Naturally, I had to learn about the difference.
Old Tom gin was popular in 18th-century England, and has had a bit of a resurgence in the craft cocktail movement. From Wikipedia, “It is slightly sweeter than London Dry, but slightly drier than the Dutch Jenever, thus is sometimes called ‘the missing link’.”
Casino is a perfect gin drink. It is tart and a little sweet, and the Old Tom gin has a lovely flavor. In fact, I think Old Tom gin might even appeal to people who don’t think they like gin. 🍒
